Panko Fried Rice Balls + Spicey Mango Sauce

Hope your week is running smoothly and being Licious as mine is.

I’m back again today with this new recipe (Panko Fried Rice Balls) which leans on the semi sweet  side. This can be used as an appetizer before getting into the nitty-gritty of the day (the main meal).

If you have seen my Easter Morning Breakfast/Brunch then this recipe should be real simple and easy.

So, lets dig in.


1 cup cooked rice

4-6 potato cups

2 eggs (Reserve one for later and use egg white of other)

11/2 cup panko bread



Break up potato cup using a fork or clean hands

Add rice and taste for salt and seasoning level

Mix together. If rice is on the sticky side skip egg white, if not add egg white

Mix and shape into balls with the aid of an ice cream scoop

Crack egg in a bowl and whisk

Heat up oil

Roll rice balls in egg and then in panko bread

Fry once oil is hot until golden brown

Mango Sauce 

1 mango cut in chunks

2-3 tbsp plain yogurt

1/4 cup milk

1/2 tsp chilli flakes


Blend everything together until smooth

pour into serving dish and serve with rice balls
