This simple and fast going recipe will have the family asking for more. Mind you, you
can always jaz it up with more veggie selections.
3 cups of rice
2 sticks of carrot
1/2 an onion
2 cloves of garlic
1/2 a teaspoon of curry
A handful of broken spaghetti
2 cans of coconut milk
3 tablespoons oil
Cut up onion and carrots into small cubes. Slice garlic into thin stripes.
In a medium sauce pan (or which ever pan works) pour oil and allow to heat up
Add curry, onion, carrots, noodles, and garlic into hot pan and stir occasionally making sure it doesn’t burn
When noodles start to brown, add salt to taste and add the coconut milk.
Add rice and stir. Add about 1 cup of veggie broth or water to contents.
Reduce the heat and allow rice to cook
When rice is soft, allow to stand for 5 minutes, fluff it and serve.
This can be accompanied with Chicken, Fish, or Beef, some good salad and a good glass of chilled drink.
